Food lately

As of lately, I'm suffering from a bit of writers block. I have ideas of what I what to post, but I can't really get the words out. 
To remedy this, I'm going to give you pictures. Pictures of delicious food that I've been collecting for a few weeks. 
Don't drool on the keyboard. 

Baked Mac and cheese with garlic toast and Caesar salad. 

Fat Franks hotdog. The best hotdog. 

Fresh lemonade at the local farmers market. 

Shake's. Cinnamon toast crunch and cap'n crunch. Amazing. 

A burger with poutine ON IT!!!

Salad at home. Home grown lettuce, cucumber, pepper, tomato, mozzarella and red apple balsamic. Ambrosia apple. Seaweed salad. 

Sunny day cocktails. 

A box of treats. I finally made it to Duchess. 

Mini banana cream pie. 

Mini chocolate cake. (Not mine!)

Scrambled eggs with shrimp, peppers and avocado. 

This feels a bit lame, but I feel the need to post something while I try to write. At least it looks delicious though...

Ode to Ikea

Recently, Chad and I have been working on making the apartment feel a little more like home. We do have at least 11 more months living here after all. 

That being said, it was time for something new. Chad brought the couch and coffee table we have from his previous move out and, let's be honest, I hate them. Mostly the table. It's ugly and broken.. The couch was ok, just dirty and a bit small for us. 


Most of our apartment, things that weren't given to us by either parents or grandparents, comes from Ikea. We like it. I like the designs, I like the price.. Dressers, bed side tables, bed, dining room table, couch, tv stand, book shelf, drawers... All from Ikea. 

As I've said, I don't like the current sofa or coffee table and I've been wanting to go look at new pieces for a while now. Chad finally caved. We went in with 2 different ideas. 
Chad was thinking we would look and maybe decide which ones we liked and maybe come back for them. 
I was thinking we would go find the one and bring it home. 

I win. 

If you've never been to Ikea, you should get out from under your rock, it's great. Even if you have absolutely no interest in the furniture, or no interest in buying it, it's no less awesome in there. I really like to play house in all the different rooms. I particularly like to play office. Imagine what the rest of the house would look like, imagine what my future house will look like. Honestly, it's a great time. And beyond furniture they have everything to decorate and make the space useful, and meatballs.... Don't leave out the meatball stop. 

Anyway, when we got there the search was immediately on. It turns out now that the very first couch we sat on was the winner. I'm loving it. I can lay on it and have extra room! It's a nice blue-toned grey with white and dark grey running through it. We also considered a dark brown-grey and a red one but they didn't seem quite right. 


Next, we got around to looking for a coffee table. I actually don't want one though. Our space is quite small and I like the in between (tv and sofa) space to be open. I've decided I want a couch table instead. Having it behind the couch keeps the open space, still gives us storage and somewhere to put drinks.. Best of all worlds. 
We didn't end up buying one, but we will. Soon. 

We also needed to get some legs. Mine are a bit stumpy. 
Just kidding.. Mostly. 
We have a desk that's been living in a box for almost a year now. For some bizzare reason, you buy the desk top and the legs all seperatly. And for an even more bizzare (and unknown) reason Chad didn't buy legs when he bought the top. 
So, we bought legs for it. Some nice red stems. 

And my sewing machine gets a home now! Finally!!!

Lastly, we needed a drying rack for the hordes of clothes I own that don't go in the dryer.  I've been wanting one for a million years now. 
I'm a happy laundry do-er these days. 

Now, even though the shopping is over and the furniture all came home with us in the truck, the adventure isn't over. 
Chad had to go to work and I was left to assemble everything. He had enough time to move the old couch upstairs though. Of course, I had to make a massive stuff movement so it would fit up there.

With the old couch in its new home, stuff EVERYWHERE and my screwdriver in hand, I'm ready to assemble the desk and give it some legs. Cut open the boxes, try to use the ridiculous pictionary instructions and bam! new furniture. Only took about 70 minutes.. 
I only did one part wrong.. Fortunately I noticed right away or it could have taken a lot longer. 


Next up. The couch. Significantly easier than the desk, but still took an hour. Both builds are meant to be done with 2 people, but I'm too impatient for that. 

And that's that. New stuff. Dani the builder. Sore back. Ridiculous amounts of cardboard boxes to recycle. 
Time well spent. 

You know you want to go to Ikea now!

Egg and shrimp fried cauli-rice

It's been a while since I put up a recipe so I figured it was time. This is another paleo recipe, but I really enjoy it anyway and it certainly isn't hurting anything by having it. 

Cauliflower is a big thing in the paleo world since it can replace a lot of other thing. Here, it replaces rice. It also makes fake mashed potatoes and pizza crusts. It's a pretty great little liar. 

This take on egg fried rice is super simple, delicious and customizable. 
To replicate mine, you will need:

Carrot
Zucchini 
Mushroom
Red pepper
Garlic
Cooked shrimp
Egg
Coconut oil or ghee
Soy sauce
Worcestershire sauce 
Salt and pepper
Cauliflower (fresh is best, but frozen works too)

Start by putting your cauliflower in a food processor. I used about 1/3 of a head. You don't want to purée it, just blitz it until it is shredded into rice-like bits. 
Dump it onto a towel  and give it a little squish to wring some of the water from it. Let it sit. 
If you use frozen cauliflower it will need more time to dry out. 


Chop up all the vegetable. You can use as much or as little as you'd like based on how much "rice" you make. 
Warm up a pan on medium with a bit of oil. I used coconut, but ghee is good too. If you don't need the recipe to be paleo, use butter or any other cooking oil you like. Just a splash. 


Once it's hot add in the vegetables and let them soften up and get delicious. 
Add the cauliflower. Let this all go for a few minutes, stir it around so it doesn't burn though. Add in some extra flavour now. Soy, Worcestershire, salt and pepper. 


When everything is soft and warm make a well in the centre and crack your egg into it. Let it fry a bit before mixing everything together again. 
Lastly, add in the shrimp. I buy mine fully cooked so I just have to let them get warm enough. 




And that's that. Now it's time to eat. Remember, customizing is the best. If you prefer chicken or shrimp, great! Want onions too? That's gross, but enjoy! Don't like mushrooms? Leave them out. Make it to your taste and enjoy it!

The last minute expo; Eek! Fest

For the first time, St Albert has it's own Comic and Pop Culture expo this year. 
Chad and I weren't planning on going because we expected it to be quite small, and frankly a but lacklustre. We were wrong. 
We bought our tickets on Wednesday to attend on Saturday, that's how dedicated we were to not going, but then something awesome happened. I was looking on twitter to see if anyone knew when guest announcements are starting for the Edmonton Expo in September and something just caught my eye. 
"Eek! Comic and pop culture expo is thrilled to welcome @amellywood this weekend!" 
@amellywood = Stephen Amell = Arrow

And then I started squealing and freaking out. In a mature adult way... Or something.......

Chad and I are huge fans of Arrow. If you don't know, "Arrow" is "Green Arrow" from DC Comics. The show airs on Wednesdays on the CW. You should watch it. Season 3 starts this fall. (The Flash also starts this fall and I'm equally excited about that!)


Moving on. Right then and there, still in bed, only awake because of excitement, I bought us tickets to the expo. There was no way I was going to miss out on seeing/potentially meeting Stephen Amell. 

I decided against dressing up for this one because we weren't really sure how big it would be, if anyone else was going to go, if there would be any other costumes, etc.. 
I must say, I felt like it was totally different to attend a con in normal street clothes. Generally speaking, costumes kind of take over everything for me. In a good way..

Friday night before the show we were looking online to see if any thing had changed or been added and we found ourselves looking at more tickets. Advanced tickets for autographs, photos or both. We went for both. Obviously!


Finally, the day of. We went early to exchange our tickets for wristbands and to see what we could see. For a start, it was pretty tiny compared to our usual conventions, but we knew that already. Otherwise it was pretty decent. A big guest, artists, panels, costume contests, different vendors.. This one also had the Alberta Lego Users (club/group/association?) and that was pretty cool. They had several tables set up displaying the work they have done. Meaning, the super cool stuff they have built. My personal favorite was the Harry Potter set!




We didn't spend much time browsing before we had to go get in line. First was the photo op line, which led, obviously, to our photo with Stephen. When that was done we waited around to get the photo printed. Shortly after that we headed down to get in another line for autographs. We had our moment with him, got a few things signed and then it was done. 
I was about ready to fall asleep by this point so we just sat and waited for the panel to start. Like most panels it had a Q&A session. 
My favorite question? "Can you take your shirt off?" 
He replied with "I'm on vacation. Next Month!"



And that was pretty much it. We did a bit more shopping and then left in search of sushi. 
Our next Expo is Animethon in August (my first time going to this one!) and Edmonton Expo in September. 
I can't wait!

Dear Me: 20-21

Well, here it is. Some of the best times of your life (to date) are coming up. You aren't doing too much of anything exciting through the year, some small travels maybe, that's fine though. All that money you are saving by not going out is going towards the trip. THE TRIP!

It's been a dream forever and it's finally happening. My main piece of advice about it, stay as long as possible. See everything. Meet people. Try the local food. Branch out away from the tourist traps. Every experience is one to be treasured and learned from. And worry less about the cost, you've worked so hard saving for this and you have plenty more than enough. 

Europe is the most amazing place. Every country, every city even, has something new to offer. Foods, markets, people, shops, history..
I have a request, though. See more of Greece. Get out of the house more, explore more of Athens, take the train through the mainland and island hop as much as possible. You belong near the sea. And if you aren't happy in the house, you don't HAVE to fight it. Leave early, nothing is stopping you and I promise not to get mad. Be gentle with the kids though, every person is simply a product of their environment. Remember that. 
Oh, and plan for more time at Pompeii.. I won't spoil the adventure, but you should trust me. 

Unfortunately it all has to end eventually. I'll never forget the look on Dads face when I arrived home though. 
Being home is a hard adjustment. To pout to much. You are so fortunate to have travelled as much as you have. Not even just with this trip. Canadian maritime, Arizona, Montana, Dakotas, California, Nevada, West coast Canada, Alberta, Saskatchewan and now so much of Europe. Just keep reliving these memories until it's time to make more. 







I'd love to post all 6000 pictures, but that just seems unrealistic. These few are just a tiny taste.
But now is the time to be an adult. Get a job, get an apartment and stay still for a bit. Not to long though.
